Greetings 4CU Members!

Memorial Day is our time to honor and mourn all of our military personal who died while serving in the US Armed Forces. May they all rest in peace and be remembered for their service and sacrifice.

We also take time during the holiday to get outside and enjoy the warmer temperatures and fire up the BBQ grills. Happy June to all! Meteorologists kick off the meteorological summer on June 1, while the calendar designates June 21 as the first day of summer. Whatever date you like, may you have wonderful travels this summer.

The summer and fall rally schedule affords loads of opportunities to hit the road. Lucky for you if you are getting ready to go to the back-to-back Chama and Angel Fire rallies this month!

Rally Roundup

Red Rocks, Silver Trailers, and Hoodoos Rally

Bryce Canyon Rally Roundup – by Karen Conley

The hosts and co-hosts for this rally were Karen and Don Conley and Barbara Lyle and Paul Strieleman. This was Barbara and Paul’s first hosting experience. From the smiles in the photo below, you can see that we all had a wonderful time!

Airstream Rally attendees at a four corners unit airstream club rally in Bryce Canyon, Utah.

Our Bryce Canyon adventure was relaxing and amazing, thanks to a surprise May snowstorm on our last day that dropped temperatures to 22 degrees. On Monday morning, the park was covered by a fresh layer of snow. Several of us woke early and ventured into the park to see the snow-covered hoodoos and spires.

During our stay, members explored the park’s trails and hiking opportunities beyond its borders. One highlight was a day trip along Scenic Byway 12, a 124-mile route from Panguitch to Torrey. The drive passed dramatic landscapes, including Red Canyon, the breathtaking Hogback, and the aspen-filled slopes of Boulder Mountain that rival the famed Panda Aspen area.

Our group included 15 rigs, from Basecamps to Classics. Ruby’s Inn RV Park offered roomy, well-shaded sites for a comfortable stay. Despite the surprise of late-season snow, we were treated to mostly beautiful weather throughout the week. It was nice to see friends and welcome new members into our group.

RECIPE OF THE MONTH

By Karen Conley

BBQ Bacon Water Chestnuts These can be prepped at home and put in the fridge if you are making them for a rally happy hour.

Ingredients

  1. Canned whole water chestnuts
  2. Bacon
  3. BBQ sauce (We used Famous Dave’s Rich & Sassy)
  4. Toothpicks (Soak in water 5-10 minutes prior to use)

Directions

  1. Preheat oven to 425. (We used our electric grill at 350.  I believe you could grill these on a regular grill. But watch them so they don’t get to crispy.)
  2. Line a rimmed baking sheet with parchment paper or aluminum foil.(This makes clean up easy!)
  3. Top with a baking rack, if you have one.
  4. Drain water chestnuts and pat dry with paper towels.
  5. Cut bacon strips into thirds.
  6. Wrap each third around a water chestnut. Secure with a toothpick.
  7. Place each water chestnut on the prepared baking sheet.
  8. Bake in a preheated oven for 10 minutes.
  9. Remove and baste with BBQ sauce, then bake for an additional 10 minutes until bacon is crispy and the BBQ sauce has caramelized.
  10. Serve immediately.

We made these at the Bryce Canyon rally.
